Vegetable spiced porridge...!!!



       
            Porridge is a food made by boiling ,crushed or chopped starchy grain like wheat, millet, maize, rice etc. in water or milk. Then it's  served with flavorings such as sugar, honey, syrup, etc. to make a sweet cereal or it is also mixed with spices, vegetables, etc. to make a savoury dish. It is usually served hot in a bowl. It's  healthy and delicious too.
  
     Today I am going to write about how to make vegetable broken wheat porridge with some spices and cottage cheese.

Ingredients-
1 cup broken wheat porridge (daliya)
2 cups of water
1 tbsp oil
1/4 tsp cumin seeds
1 medium sized onion chopped
1 large tomato chopped
1 green chili chopped
1/4 tsp ginger chopped
1 small potato diced
1 small carrot  diced
1/4 cup green peas
6 French beans roughly chopped
1/4 cup green capsicum roughly chopped
1/4 tsp red chili powder
1/4 tsp turmeric powder
1/4 tsp garam masala powder or spice powder
1/4 cup green coriander
1/4 cup cottage cheese cut into small cubes 
salt to taste
pinch of black pepper powder

Method-
Wash daliya well in water and let it soak for about 30 minutes in water, after 30 minutes drain the excess water and roast daliya a little in a non stick pan with 1/2 tsp of oil.
Now take a pressure cooker put oil and heat then crackle cumin seeds add onions and cook till soft then add tomatoes and all the vegetables then add all the spices and add roasted daliya then add 1 -1/2 cup of water and pressure cook it for 1to 1/2 whistle then let the pressure cook open by itself don't release it's pressure by yourself , when it's open add coriander leaves and cottage cheese and mix and serve hot with lemon.

     Today I am going to write about how to make Chinese style HOT and SOUR Vegetable SOUP, It's healthy and delicious and will make you full for longer .

  Soups are of many types, they are  primarily liquid food, generally served warm or hot (but may be cool or cold), that is made by combining ingredients like vegetables with stock, juice, water, or another liquid. Hot soups are additionally characterized by boiling solid ingredients in liquids in a pot until the flavors are extracted, forming a broth.

               Today there are varieties of dry soup powders in the market but I prefer  making fresh from vegetables and they give you that much need warmness in winters. It's good even for kids because they love Chinese but don't like to eat vegetables, for them it's an healthy option.

Ingredients-
1 tbsp oil
1/2 tbsp chopped garlic
1/2 tbsp chopped ginger
2 tbsp  chopped onion
2 tbsp tomato puree or you can also use chopped tomato
1 green chili chopped
1 cup cabbage
1 large carrot chopped
1/2 capsicum chopped
4-6 French beans chopped
2 tbsp tomato ketchup
1 tsp soy sauce
1/2 tsp white vinegar
1/2 tsp green chili sauce (you can add more according to your taste)
Salt to taste
1/4 tsp black pepper powder
4 cups of water or vegetable stock
1 tbsp cornflour or cornstarch
Handful of green coriander or cilantro
Few spring onions


Method-

Take or wok or pan heat oil then add chopped garlic and sorte then add ginger and onion and sorte for 1 minute then add all the finely chopped vegetables and sorte for two minutes then add vegetable stock or water, add salt, pepper, and all the sauces like tomato, soy, green chili and vinegar stir well,
now take a bowl and mix 3 tbsp of water and 1 tbsp of cornflour or cornstarch and make a paste then add this into soup and stir well, keep stirring till it gets a good soup like consistency then add handful of spring onions and coriander leaves and serve hot with any bread of your choice.
You can also add few small cubes of cottage cheese if you wish to.
